Tasting Notes

 

  • Colour : Deep Bright and lovely light garnet-red colour.
  • Nose : Very elegant with a quintessence of red berries, strawberry, cherry, and soft spices aromas with a hint of vanilla.
  • Palate : It’s a medium bodied wine, with ripe tannins and acidity which testify its capability to age. It develops very delicate aromas and a long lasting finish.
  • Food & Wine pairing : Best served at 16° C. To be served with grilled meat: lamb, veal or pork, game and soft /medium cheese.

Description

Vineyard

  • Climate : Mediterranean
  • Elevation : 60 – 120m
  • Soil type : Clay and limestone with gravels.
  • Age of vineyard : 15 years old
  • Density of planting : 4000 vine plants/ha
  • Pruning : Simple Guyot
  • Harvest : Mechanical at night at full maturity
  • Average yield : 55 hl/ha

Vinification

Destemming of the grape, skin contact maceration at 10°C for 3 days for aromas and colour extraction. Fermentation with selected yeast at 25°C maximum. Skin contact maceration for 5 days and then pressing. Only the first presses are reincorporated into the final blend. The wine is put in barrel for the malolactic fermentation. After malolactic fermentation the wine will age in oak barrel for 6 months and then bottled. We used 70% French oak barrel and 30% American oak barrel.
