Soil:
Calcareous-clay soil. The 14 year old vines were chosen for their low yields (8,000kg/ha).
Grape
varieties:
100% Sauvignon
This early-fruiting grape variety is ready for harvesting
in early summer; mechanical harvesting in the cool hours of the morning
(4am to 10am) to ensure the must is not oxidised, which would ruin the
fleeting, delicate flavours of the grape.
Vinification:
Date of the harvest: 26 August 2007.
Vinification: macerated partly on the skins and partly by direct
pneumatic pressing; must racked at 8°C followed by a three-week low-temperature
fermentation; stirred and left to rest on the second lees for three months.
Cellar work in stainless steel or lined concrete tanks.
Tasting:
A light yellow colour with hints of green and the grapes typical
grapefruit and boxwood bouquet.
Lively on the palate, with citrus and boxwood aromas evolving to a flavour
of pears.
Serving Suggestions:
Serve well chilled; as apéritif with salmon, fish roe,
grilled cheese, raw or cooked seafood snacks on toast; seafood (mussels,
oysters and cockles) served hot or cold, brings out the full flavour of
the wine.
