Soil:
Calcareous-clay soil. The 14 year old vines were chosen for their low yields (4,500kg/ha).
Grape Varieties:
100% Viognier. Mechanical harvesting allows us to harvest during the coolest parts of the day (between 4am and 10am) thereby avoiding oxidation of the must which would be a disaster for preserving the delicate and fleeting flavors of the grape variety.
Vinification:
Date of harvest: September 06, 2007. Part of it was vinified using pellicular maceration while the rest underwent direct pneumatic pressing, stalk removal at 8°C, fermentation at low temperatures for 3 weeks, stirring and storing of the wine on fine lees for 2 months. It was then left to mature in a stainless steel or coated concrete vat.
Tasting:
Straw yellow color with an intense and very complex nose of pineapple, lichees, peaches and apricots. Full-bodied and flavorful on the palate with a lot of volume.
Serving Suggestions:
Serve between 12-13°C, not too cold, and let the wine breathe or decant it before serving. It may be drunk for cocktails or between meals and is one of the rare dry wines that goes very well with salads, including those with vinegar dressings, and in general with all fresh vegetables.
