Tasting Notes

 

  • Colour: Very light yellow, shiny with green reflection
  • Nose: Fresh and floral aroma, fruity (Carambola, Yuzu …)
  • Palate: A subtle wine at first that reveal itself during the opening. Standing out by its great vivacity and subtlety, mixing aroma complexity and overall delicacy. Incredible length thanks to an exceptional final touch of saltiness.
  • Food pairing: Salmon Gravlax and Nordic cream, Sauerkraut of the sea, oysters, razor shells, Mayonnaise foam, Norway lobster, St Pierre filet with citrus sauce …
  • Cellaring: 3 to 5 years

Description

Vineyard

  • Soil type : Clay and Limestone on lagoon bed with salt content.
  • Age of the vineyard : 12 year-old
  • Pruning : Simple Guyot
  • Harvest : Machine harvest at night in order to prevent from oxidation.
  • Average yield : 52 hl/ha
  • Climate : Mediterranean with continental influences

Vinification

Destemming of the grape, skin contact maceration for 4 hours. Pneumatic pressing under inert gas. Settling at low temperature (8°C). Fermentation for 3 weeks under controlled temperature (less than 17°C).
Ageing is made on lees with regular “batonnage”.
