Tasting Notes

 

  • Colour : Intense and deep purple color, purplish highlights.
  • Nose : Fruity (Blackberry, Blueberry), floral (Violet), and spicy (liquorice), with fine roasted notes.
  • Palate :smooth, creamy texture, all in elegance. We find the aromas of the nose in the mouth, with a nice freshness, a grain of fine tannins and a perfectly integrated smoke finish.
  • Food pairing : Marinated and grilled pork ribs, pigeon in smoked filet with vine stock.
  • Cellaring : 3 to 5 years

Description

Vineyard

  • Soil type : Clay and Limestone on lagoon bed with salt content.
  • Age of the vineyard : 12 year-old
  • Pruning : Simple Guyot
  • Harvest : Machine harvest at night in order to prevent from
    oxidation.
  • Average yield : 52 hl/ha
  • Elevation : 50-80 m
  • Climate : Mediterranean with continental influences

Wine Making

Destemming of the grape, skin contact maceration for 4 hours. Pneumatic pressing under inert gas. Settling at low temperature (8°C). Fermentation for 3 weeks under controlled temperature (less than 17°C).
Ageing is made on lees with regular “batonnage”.
